This is one of my all-time favorite dishes and very easy to make. I live near the beach and love a bowl of mussels for a delicious summer meal. Chili scallops are very popular here at Avs but this is my VERY favorite way to eat clams
Ingredients and spices for the preparation of moules marinières:
- 1 large onion
- 2 cloves garlic (or 3 cloves if you want a strong flavor)
- 1 kg fresh mussels (not green)
- 200 ml cold and crispy white wine
- 1 teaspoon plain flour
- 1 salt and pepper
- 1 crusty bread or fresh baguette
- 1 chopped parsley (optional)
Steps to prepare moules marinières
- In a basin of water, clean the shells and remove the spines (a fish farmer can do this for you, but I always do). Remove the ones that WILL NOT CLOSE WHEN YOU PUSH POWERFUL (Note: I didn't use green lipped scallops as they are hard and firm, the smaller black ones are much better)
- Finely chop the onion and garlic
- Saute onion and garlic until fragrant but not brown
- Add the clams to the pan with the onion and garlic
- Pour the wine over it. Cover the clams and cook until they are all exposed, about 10 minutes
- Meanwhile, mix the flour and butter into a dough
- Strain the wine into another small saucepan and bring to a quick boil, then add the butter/flour paste and stir into the liquid. Reduce heat and simmer until sauce thickens (about 3 or 4 minutes).
- Optional - Sprinkle parsley sprigs over clams
- Season with salt and pepper and serve with bread/baguette.
