Instructions for making braids (knee bread) with lemon and almonds

  1. Mix the ingredients in a bowl and let it rise first. When it's fluffy and the dough is 2-3 times its original volume, that's it. It takes about 10 minutes.
  2. While kneading the dough from step 1, mix the breadcrumbs, sugar, butter and warm milk (40°C) in a bowl and knead with your fingers.
  3. Once the yeast has risen, add it to the bowl from Step 2 and mix well again. Finally add salt and mix well.
  4. When the batter is well mixed in a bowl, transfer it to a work surface. Knead well, keep it away from you, roll over and repeat.
  5. When the surface of the dough is smooth and slightly rough, roll it into a smooth surface ball. Place in a large bowl and cover with plastic wrap.
  6. For the first rise, let the dough rest for about an hour at 35°C until it reaches 2-2.5 times its original volume.
  7. Transfer the dough to a lightly floured work surface and wipe with both hands to remove air. Cut out 4 slices with a cookie cutter.
  8. Fold and round the dough towards the center. Cover with a well-wrung, damp cloth and let the dough rest for 15 minutes.
  9. Mix the grated lemon peel and sugar together.
  10. Remove the dough from the bottom of the fabric and roll out with a rolling pin to about 15 x 10 cm.
  11. Divide the sugar and lemon mixture from step 9 into 4 parts. Spread the mixture and flaked almonds over the rolled out dough, leaving a space of 2 cm on one side. Roll in cylinder.
  12. Close the seams tightly.
  13. Lay the dough seam side down and make two cuts at the ends, leaving 2 cm free. Cutting the dough will expose the layers of dough, so be careful not to damage it when cutting.
  14. Weave the dough and connect the ends. Bend the pinched end slightly under the roll and hold it in place.
  15. Place the rolls of dough on a baking tray lined with baking paper, cover with a damp, well pressed cloth and leave to rise at 35°C for 30 minutes.
  16. Spread buns with melted butter. Bake for 18-20 minutes, then leave to cool on a wire rack. It's over.
