- Mix the buckwheat flour and bread flour in a bowl. Add 1/2 of the water. Sprinkle the edges so that the water does not reach the bottom of the pan.
- Knead quickly until the dough is crumbly. If it sticks to the bottom of the bowl, lift it up as you stir.
- Add the rest of the water and continue mixing and scrubbing. Make sure the water is evenly distributed. The dough should resemble cooked beef.
- Press the dough to form a ball. Knead, always folding the edges towards the center.
- When the surface of the dough is not floury and soft, it is ready. Gather the dough to the center and form a cone.
- It should look like a normal cone.
- Press the dough onto the tip of the cone. Roll out the dough with a rolling pin, sprinkle the surface of the rolling pin, the dough and the work surface. - Fold the dough from top to bottom.

- The right tools help a lot. I bought a special oven knife and plate to help keep the slices even. Cut the dough into even slices.
- Put the noodles in boiling water. Stir with the kitchen chopsticks in the shape of a figure 8. When the noodles rise to the surface, cook for about another 30 seconds and that's it. Drain, rinse several times under cold running water and cool under ice water.
