Steps to make dairy-free apple pie
- Preheat oven to 350°F.
- Prepare the filling: peel, core and thinly slice the apples, then cut the slices in half. Mix apple pieces with sugar, cinnamon and lemon juice. Bake the apple filling in an 8-inch square pan (or a 9-inch pie pan) for 15 minutes. Remove from oven and set aside. (Note: Do not turn off the oven at this time. You will be using it to bake the finished braid.)
- Make the bread: While the apple filling is baking, start making the bread dough. Mix the dry ingredients in a large bowl. Add the water and oil and mix the dough for 6 minutes with an electric mixer on medium to high speed. Spray a clean, smooth surface with cooking spray and place the dough on the surface. Knead the dough briefly to give it a smooth surface (it only takes a few turns of the dough). Spray a rolling pin with cooking spray and roll the dough into a large rectangle about 12 by 16 inches. Freeze on a greased baking sheet. Using a pizza cutter or sharp knife, cut each side into strips about 1 inch wide on each side, leaving the middle third of the dough uncut. Spread the apple filling in the middle third of the dough. Fold the dough strips in the middle, crossing the filling with alternating strips on each side. Gently press the ends to secure the braid and smooth the braid with your hands if needed.
- Make the frosting: Whisk the frosting ingredients in a small bowl until smooth. Spread the glaze in a thick layer over the entire surface of the apple braid while it is still cooling. Carefully transfer the braid to a cooling rack set on a baking sheet (to catch drips) to cool completely and prevent the bottom of the braid from getting wet and sticking to the seam. Slice and serve.
