Ingredients and spices to make Hubby's Spinach and Potato Chicken Kabab:

  1. 1/4 cup cooked spinach or chopped raw spinach (whichever you prefer)
  2. 1 kg boiled potatoes
  3. 1 tablespoon red chili pepper (also called crushed red pepper)
  4. 2/3 teaspoon of salt
  5. 1/4 teaspoon black pepper
  6. 1 1/2 tablespoons vinegar
  7. 1 box chicken cubes (any brand, I use Knorr or K&N brand), 2 cubes in each box.
  8. 2 very fine medium green chillies
  9. 3 tbsp bay leaf (add more if desired)
  10. 4 tablespoons rolled oats (full tablespoon)
  11. 1 beaten egg and breadcrumbs for the vinaigrette
  12. 4 tablespoons of oil to taste.

Steps to prepare spinach, potato and chicken skewers

  1. Store cooked spinach in a colander or something you have in your kitchen, like a flour sifter, and let the spinach dry out properly.
  2. Take the vinegar in a small bowl and add the chicken cubes. We divide the soup into pieces, then squeeze it so that it dissolves easily in vinegar and let it stand for 5-8 minutes. After 5-8 minutes, the cubes soften and mix with 60% vinegar. This allows them to go well with potatoes.
  3. Slightly heat a dry pan and add the semolina. Stir the pan occasionally until the oats turn light brown like breadcrumbs. Light brown, not dark brown, spoils the taste. Once you are done, take the oats out into a large pan, spread them out properly and let them cool.
  4. Meanwhile, take the cooked potatoes in a large bowl and mash them well.
  5. Then add salt, red pepper flakes, green pepper, black pepper and spring onions to the mashed potatoes and mix well. (I always mix with my hands, not a fork or a spoon or anything).
  6. Now mix the vinegar and the chicken cubes and add them to the mashed potato mixture. Mix well and set aside.
  7. Now take the spinach and put it in a mortar and grind it with your hands until it becomes smooth. Add this paste to the mashed potato mixture and mix well again.
  8. Now finally add the semolina and stir this potato mixture well one last time so that all the flavors are evenly distributed in every part of the mashed potatoes.
  9. Your kebab/patties/meatballs mixture is now ready. From this mixture, make small balls, roll them in the beaten egg and brown them in 3-4 pans filled with hot oil. You can cover it with breadcrumbs if you like. I make them into patties and freeze them, but let them thaw before frying. Cool slightly before using or serving.
  10. You can accompany it with fried/boiled white rice. You can save these b/w pieces of bread and make sandwiches out of them. If you wish, you can put ketchup or a piece of cheese on the sandwich. You can sprinkle some cheese on the patties and bake until the cheese melts. Or you can enjoy them on their own :-) There are many things you can do with these kebeles. When I want a light lunch, I prepare it and serve it with white rice. We also eat it for dinner and my family loves it :-) very easy and tasty... also delicious :-)
