Instructions for preparing pizza flour
- Place the bread in a large bowl. Add sugar, salt and yeast to the flour. Mix to mix well.
- Mix melted butter and warm water. Pour the water mixture into the flour mixture and mix it by hand with a large spoon. At this point the dough should look more like pancake dough than pizza dough, but keep stirring for a minute or two to build up the gluten properly!
- Mix again (by hand) 2-3 cups of AP flour. This should prepare the flour to taste. Use the remaining flour to clean a clean and smooth work surface.
- Whisk the flour until it is not sticky. The outer “skin” becomes smooth.
- Divide the flour into the desired pizza number. This recipe makes two large pizzas or four small pizzas. Roll the divided dough into balls, grease them with oil and place each piece in a separate bowl.
- Turn the oven to 350F, but keep it warm for only a minute and turn off the stove. The idea is just to preheat the oven; So it’s not hot. Cover each bowl with a damp towel. Leave in a preheated oven for 2-3 hours or until the flour doubles in size.
