  1. 1 slice of bread is preferred
  2. 1 cup leftover or fresh mashed potatoes (I don't use instant mashed potatoes so I'm not sure it would work the same)
  3. 1 medium or large fresh egg
  4. 2 tablespoons of vegetable oil or butter, to taste
  5. 2-3 Chavrou creamy goat cheese or equivalent or use any other cheese that melts while the egg is cooking.
  6. A pinch of garlic powder or a small amount of minced garlic
  7. 1 smoked paprika or other
  8. 1/4 teaspoon dried parsley or 1/2 teaspoon finely chopped fresh parsley

Steps to making Sig's meal in bed :)

  1. Make fresh mashed potatoes (you can try instant, but I don't) or use leftover mashed potatoes. Fry gently until well heated and starting to brown a little.
  2. Alternatively, toast the bread in a pan, leaving it almost raw on one side and toasted on the other, and remove it from the pan. . You can also highlight the grilled bread, lightly toasted on one side and on the other, or to your liking. Use a round, square or star cookie cutter, or any shape that can be evenly spaced, place it in the center and cut out the middle of the dough. Set the sliced ​​bread aside.
  3. Spread the mashed potatoes on the lower side of the bread and in the crevices.
  4. Turn on the grill to prepare.
  5. Place the bread on a lightly greased baking sheet or use the bottom of a non-stick pan. Add a few thin slices of creamy, soft goat cheese. Sprinkle the cheese with all the spices.
  6. Take the pan where you spread the puree, cut it in half or in quarters and place it on top of the bread. You can cut the cheese and bread anywhere except in the middle
  7. Pour in half the egg and cook gently until the egg is cooked to your liking. I like it when the yolk is a little browned, but with the glaze on it, we fry it.
  8. Alternatively, you can highlight one side of the bread a little more than the other, keeping both sides cooked but browning one side slightly. Remove the bread. Put the mashed potatoes on the soft side, make cuts, add the bread and cook in a pan, add the egg, then do the following: grated, cheese and spices and cheese and put under the grill to brown.
