Our group of 25 friends decided to host a progressive dinner as an annual celebration of the wonderful people around us. Each house has 2-3 couples serving snacks/drinks. - Ingredients for meatballs
- 2 pound turkey
- 1/2 cup Italian-flavored breadcrumbs
- 2 eggs
- 1/4 cup milk
- 1 tablespoon dried oregano
- 1 tablespoon poultry seasoning
- 1 teaspoon dry parsley
- 1 teaspoon dried sage
- 1 teaspoon dry thyme
- 1 teaspoon of salt
- 1 teaspoon garlic powder
- 1/2 teaspoon pepper
- 1/2 teaspoon garlic powder
- 1/4 teaspoon dried dill
- fill ingredients
- 2 pieces turkey stuffing (prepared)
- frying ingredients
- 1 cup Italian flavored breadcrumbs
- 1/4 cup vegetable oil
- Cranberry Juice Ingredients
- 1 12-14 oz canned cranberry sauce
- 1/2 cup (1 stick) butter
- 1/4 cup sugar
- Additional Content
- 1 can/jar of turkey sauce (spicy)

- Preheat oven to 350 degrees (F).
- Make 2 squares of the turkey stuffing. Remember.
- Mix all the ingredients for the meatballs with your hands. Cut the meatballs into small pieces. Use about 1 tbsp. Meat mix for everyone. Place the meatballs on a baking sheet lined with parchment paper. Bake for about 15-20 minutes.
- Add about 2 tsp. Fill your palm and flatten it. Place the filling in the center of the meatball and wrap the filling around the meatball. Once you have the filling around the meatball, roll it up as you would for a meatball. This allows you to cover the entire surface of the meatball with a thin layer of filling. The filling should not be too thick on the outside.
- As you roll each ball, place them in the pan/bowl along with 1 cup of breadcrumbs. Roll each ball to cover with breadcrumbs. Repeat with all dumplings.
- Helpful Tip: It's recommended, but not necessary, to chill the balls for at least an hour before frying.
- Fry the small balls in a glass of vegetable oil. When you're done, remove each and place them on a plate lined with paper towels.
- Prepare cranberry juice: Place all ingredients in a medium saucepan and simmer for about 10 minutes. Mix well. Arrange the meatballs to serve.
- Covering each ball with a small paper cupcake liner adds to the presentation and ease of serving.
